  •  PRETZELS with seeds

    Everything always can start from baking a good pretzel. Trust me. In my situation, I finally opened this page, and also started baking regularly. I was thinking that making things that taste like from a bakery it’s hard, but I was really wrong. It’s so easy, and today I’ll tell you how to start from zero. 

    At the start it is important to see if you have every ingredient. So here you can see a list:

    INGREDIENTS:

    1 ½ cups of warm water(360ml)

    1 tablespoon of salt

    1 tablespoon of sugar

    1 packet of active dry yeast(2 ¾ tsp)

    4 ½ cups of all-pourpose flour

    3 tablespoons of oil or olive

    ⅔ cup of baking soda

    2 beaten eggs

    ⅔ cups of seeds(i used sunflower and chia)

    Okay, everything prepared? Now I can tell you how to make these amazing pretzels. The whole process will take around 1.5 or even 2 hours! I hope you have patience for this, but I promise, it’s really fun. You can make them with your whole family or solo. It’s your choice!

    1. You will need 1 big bowl for this step. In there, mix warm(but not too warm!) water, salt and sugar until all combined. Next add yeast, and let it rest in the water for 5 minutes, until the yeast starts turning into foam(you will see small bubbles!).
    2. Now add flour and 2 tablespoons of oil. Mix it gently until a dough forms. It’s important to not do this too fast, cuz the doubt can be too hard.
    3. After that, remove the dough from a bowl, and use the rest of it to cover the bottom and the sides of the bowl. Put the dough back in there. The oil will help you later. I didn’t do this the first time I was doing it and it wasn’t really nice in the end.
    4. Cover the bowl with plastic wrap, and leave in a warm (also can be a room temperature) place for around 1 hour. 
    5. Preheat your oven to 230 C (446 F) on conventional heat.
    6. Now cut dough into 8-16 (it depends how thin you want to have your pretzels) pieces and roll them out into thin ropes, twisting the ends in a pretzel shape.
    7. You did ¾ of them? Great, now add the baking soda to a large pot of water, and finish shaping the pretzels. When the water starts boiling, boil each pretzel for 30 seconds per side. After that let each pretzel rest on a plate for 1 minute.
    8. Transfer pretzels into a baking sheet, brush with beaten egg, and add seeds at the top.
    9. Bake for around 15 minutes until golden brown. When they are ready, wait 10-15 minutes until eating(they could be too soft and wet)

    Now you have an amazing and tasty snack, breakfast or you can add it as a side dish to dinner or lunch! I hope you will like it, because my whole family loves them! I have one warning for you – don’t be surprised when they disappear too fast!

    COOKIES WITH SUNFLOWER SEEDS

    made with love, sugar and joy.

    I have a lot of memories with them. My mom started doing them in 2015, I know it’s a lot of time. This recipe is also on her blog – najsmaczniejsze.pl, but in Polish – she made them when I was in my first year of school, so a lot of time ago. They are really easy to make, and for me, the smell of them in the oven reminds me of my childhood. 

    Like always, ingredients go first, like ladies in the doors.

    INGREDIENTS:

    150 g blended oat flakes 

    100 g sunflower seeds 

    100 g chopped walnuts 

    100 g sugar (my mom was always using 50 g white sugar and 50 g cane sugar) 

    50 g butter 

    50 g flour 

    1 egg almond flavouring 

    0.5 tsp baking powder

    Are you done preparing? Cool, same here. You should know, that preparing them will take you something around 30 – 40 minutes (20 minutes of boring waiting, i hope you prepared something to do in this time hahaha)

    1. Cream the softened butter with the sugar. Add the egg and a few drops of almond essence – mix again. 
    2. Add the flour and baking powder to the butter, then add the blended oats, sunflower seeds, and finely chopped walnuts. Mix thoroughly. 
    3. Line a baking sheet with parchment paper. Form walnut-sized balls from the mixture, then gently flatten them with a teaspoon to form flat, round cookies. 
    4. Place the baking sheet in a preheated oven at 180°C (350°F) and bake for 15-18 minutes, until the cookies are golden brown.
    5. Now, my mum always told me to wait 3-5 minutes until eating them, so I recommend it to you too.

    When they are done, you have two options: pack them for later and think about them all the time, or eat them one night, because they are that much addictive. Hope you will love them as much as I do!!
